Stuffed Peppers

Okay, I have never actually had the peppers stuffed (I guess that is how you are supposed to do, but I don't know how).

1 lb. ground beef
1 pepper
1 c. cheese (or more :)
1 can tomato sauce (8oz.)
1 tbsp. worchestershire sauce (opt.)
1 cup rice
1/4 cup onions
salt and pepper

Boil pepper for 5 minutes, drain and cool.
Brown meat. Add cheese, chopped onions, tomato sauce, worchestershire sauce and salt and pepper to taste.
Cook rice (I use minute rice) and add to meat mixture.
Slice pepper and lay on bottom of loaf pan. (I also chop some to add to meat mixture)
Put meat mixture on top of sliced peppers and sprinkle with cheese.
Bake @350 for 25 minutes.

Spaghetti

Ingredients:
1 lb. ground beef (more if you like)
2 1-lb. cans tomatoes
1 Tbls. sugar
3/4 chopped fresh onion or 2 Tbls. dried minced onion
1 clove garlic
1 8 oz. can tomato sauce
1 1/2 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. crushed oregano
(I usually double this recipe so there are plenty of leftovers!)

Mix all ingredients except the ground beef. Simmer uncovered 30 minutes. Add browned ground beef and continue to simmer 30 minutes longer. Serve over hot spaghetti. Top with ramano or parmesan cheese.

Citrus Chicken and Rice

Ingredients:
Cooking Spray
4 skinless, boneless chicken breast halves
1 3/4 cups Swanson Chicken Broth
1/2 cup orange juice
1 medium onion, chopped (about 1/2 cup)
1 cup uncooked regular long-grain white rice
3 tablespoons chopped fresh parsley or 1 tablespoon dried parsley flakes
Orange slices

1. Spray a 10 in. skillet with cooking spray and heat over medium-high heat for 1 minute. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken and set aside.
2. Stir the broth, orange juice, onion and rice into the skillet. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes.
3. Return the chicken to the skillet. Cover and cook for 10 minutes more or until chicken is cooked through. Stir in the parsley and top with the orange slices.

French Bread Pizza

This is one of my favorites!

1 loaf french bread cut in half length wise
cream cheese
pizza sauce
toppings (I like sausage, pepperoni, and bacon)
cheese

Put cream cheese on each side of the french bread and then put the pizza sauce on. Put on the toppings that you want and finish it off with cheese.

Bake at 350 for about 10-15 minutes or until it is heated through and the cheese is melted.

Lasagna

lasagna noodles
ground beef - 1 lb.
spagetti sauce - large can
mozzarella cheese - 2 cups
parmesan cheese - 1/2 cup (if available)
ricotta cheese (optional)

Brown and drain ground beef seasoned with salt and pepper. Add spagetti sauce and simmer, if desired. Cook noodles according to package directions. Drain. Arrange one layer of lasagna in parallel strips in bottom of greased 9 x 13 inch baking pan. Top with meat sauce, mozzarella cheese, and ricotta cheese (if used), repeating layers ending with mozz. cheese on top. Sprinkle with parmesan cheese (if available). BAKE at 350 for @ 30 minutes. Let stand 10 minutes before cutting for better serving.

Serves 6 - 8.

Homemade mac & Cheese

Mom's Mac & Cheese

7 oz. (2 c.) elbow noodles
2 T. margarine
1/4 c. small onion
2 T. flour
1/2 t. salt
1/4 t. pepper
2 C. milk
8 oz. sharp cheddar cheese, cubed

Make noodles. Melt margarine separately. Add everything else, except the cheese, to margarine and heat in pan until boils. Let it boil for 1 min. and then add the cheese. Stir until it's creamy. Stir sauce into the noodles and mix until noodles are coated. Pour all of that into a ungreased 8x8 pan. Bale at 375 degrees for about 30 min.
