Chicken Cordon Blue
8 chicken breasts (or enough chicken tenders to fill a 9x13 in. pan)
8 thin slices of swiss cheese (or enough to cover the top of the chicken)
8 thin slices of ham; deli style (I cut the ham into est. 1 inch cubes and "sprinkle" the ham over the cheese)
2 cans cream of chicken soup
1/2 c. water
1/2 c. sour cream
Place chicken in baking dish and top with cheese and ham
Mix soup, water, and sour cream together and spread over the top
Then mix together:
2 cups crushed Ritz crackers
1/2 c. melted butter
Sprinkle of top of soup mixture
Bake at 325 degrees for about an hour.
We had dinner with some friends the other night and she made this. It was so good that I had to get the recipe from her. It is pretty easy to make too!

Chicken and Rice Casserole
Chicken and Rice Casserole
2 cups of instant rice (not cooked)
1 large can of chicken
1-2 can of cream of chicken soup
1/2 cup mayonaise
1 chopped onion
1 cup chopped celery
1/3 cup chopped almonds (if desired)
1 can water chestnuts(if desired)
2 cups of milk
Mix all ingredients together in a casserole dish. Saute onion and celery and add to mixture. Back on 350 for 45 minutes. Sprinkle with cheese for the last 15 minutes and cook until the cheese is bubbly.
This one is super easy to throw together at the last minute. :-)

2 c. flour
1/2 cup powdered sugar
1 cup butter
Mix well and press into an un-greased 9x13 in. pan. Bake for 20 minutes at 350 degrees.
Filling:
4 eggs; slightly beaten
2 cups sugar
1/4 cup flour
1 tsp. baking powder
1/2 cup lemon juice (I use fresh lemons and I use about 6 lemons)
Pour filling over slightly cooled crust and bake an additional 25+ minutes. Cool completely and drizzle with glaze.
Glaze:
1 cup powdered sugar
2-3 Tbs. lemon juice
ENJOY!!!!!!!!!!

What to make for dinner?
I don't know about everyone else, but I am always struggling to come up with new ideas of what to make for dinner. Seems like I always resort back to the same ole thing every week.
